This Chicken Cobbler Is the Perfect Dinner for a Cozy Night In

When it’s cold outside, going out to eat seems like a lot more effort than it’s worth. Save time, money, and the need to change out of cozy pajamas, by making some chicken cobbler instead. This recipe is so easy to follow, that you won’t need to brave the cold in order to have a nice meal.

Ingredients

  • 2 cups cooked chicken, shredded or chopped
  • 1 cup frozen peas and carrots
  • ½ cup chopped onion
  • ½ cup chopped celery
  • 2 cloves garlic, minced
  • 2 Tbs. butter
  • 2 Tbs. all-purpose flour
  • 1½ cups low-sodium chicken broth
  • ½ tsp. dried thyme
  • ½ tsp. dried rosemary
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • 1 cup all-purpose flour
  • 1½ tsp. baking powder
  • ½ tsp. salt
  • ½ stick cold butter, grated
  • ½ cup milk

Instructions

  • Preheat oven to 400°F.
  • Sauté onion, celery, and garlic in butter over medium heat until tender – about 5 to 8 minutes. Add flour and stir until blended.
  • Add chicken broth, stirring constantly. Add thyme, rosemary, salt, and pepper. Cook for 3 to 4 minutes until thickened.
  • Stir in chicken and frozen vegetables. Pour the chicken mixture into a baking dish.
  • Combine flour, baking powder, and salt into a skillet. Add butter, milk, and biscuit dough.
  • Bake until the biscuits are golden brown and the filling is bubbly – roughly 20 to 25 minutes.
