  • 1 (8 oz.) pkg. cream cheese, at room temp.
  • 1 (3.4 oz.) pkg. banana cream instant pudding and pie filling
  • ½ cup milk

Directions

Start by preheating your oven to 350°F and lining a 13×9 baking pan with foil, leaving a 2” overhang. Coat it with cooking spray. In a bowl, combine 2 cups all-purpose flour, 1 cup finely ground Nilla wafers, 2 tsp. baking powder, and ¼ tsp. salt. In a separate bowl, mix 1 cup melted butter, 1 cup light brown sugar, 3 eggs, and 1 tsp. vanilla extract; then stir in the flour mixture. Spread this batter in the pan and let it bake for 20 minutes. Poke a toothpick in the center. If the toothpick comes out clean, you can take it out of the oven. For the topping, beat 1 (8 oz.) package of cream cheese, 1 (3.4 oz.) package of banana cream instant pudding and pie filling, ½ cup milk, and the remaining 2 eggs until smooth. Spread this mixture over the baked crust and bake until set, approximately 15 minutes. Top it off with 15 Nilla wafers, let it cool, then cut into squares.

Using a mixer on medium speed, beat the ice cream for about 30 seconds, then fill each cup two-thirds of the way with the softened ice cream. Gently press the banana pieces into the ice cream. Freeze the cups for approximately 4 hours or until the mixture is firm. In a bowl, blend the melted chocolate and vegetable oil, allowing it to cool to room temperature. After peeling the wax-paper cups from the frozen pops, dip each pop into the melted chocolate, ensuring a delightful coating. For an extra touch, sprinkle chopped nuts on the chocolate coating if desired.
